A fennel salad you’ll love
Fennel is known to taste almost like licorice-flavored celery — crisp and crunchy with a pronounced flavor when raw. Some people love it right away; others need to taste it a few times first. So do a good deed and try this recipe out on someone who’s never had it before — they may be surprised by the new flavor.
Why is fennel a good thing to like? It’s a good source of vitamin C, potassium, and fiber — and its peak season is now: summer and fall. Plus it’ll keep you from getting bored of the same ol’ salad. So add it to your repertoire!
When buying it, select large, firm, crisp fennel with creamy white bulbs and bright green stalks that emerge straight up rather than out at an angle. Fennel should smell like licorice or anise and can be refrigerated up to 4 days. Try this recipe and let us know what you think!
Spinach and Fennel Salad
Total Time: 10 minutes
Serves: 6
* 2 bulbs fennel, sliced very thin
* 1 (6-ounce) bag baby spinach leaves
* 5 mushrooms, sliced very thin
* ¼ cup lightly toasted pine nuts
Ingredients for Dressing:
* ¼ cup lemon juice
* ¼ cup olive oil
* ¼ cup rice vinegar
* 1 Tbsp. Splenda
* 3 tablespoons Dijon mustard
* Salt and white pepper, to taste
- Combine the fennel, baby spinach, mushrooms, and pine nuts in a bowl.
- Whisk last five ingredients together to make the dressing.
- Toss the dressing in with the salad and serve!
